Down Home Cooking / Share your Christmas Cookie Recipe

Looking for some new cookie recipes that look nice on a cookie tray.
 
Here is one of my favorites. 
 
          CHOCOLATE COVERED CHERRY COOKIES   

COOKIE DOUGH:

1/2 c. butter
1 c. sugar
1 egg
1 1/2 tsp. vanilla
1 1/2 c. flour
1/2 c. cocoa
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. baking powder

TOPPING:

Sweetened condensed milk
6 oz. bag chocolate chips
1 jar of 48 maraschino cherries

Mix together butter and sugar then add next 7 ingredients. Mix. Set aside cookie dough. In separate bowl, combine 1/2 cup sweetened condensed milk and 6 ounce bag chocolate chips. Melt in microwave. Stir and set aside. Form dough into 1 inch balls. Place on ungreased cookie sheet. Press with thumb, add cherry (or half cherry). Top with chocolate topping mixture. Bake at 350 degrees for 8 minutes.

The couple was 85 years old, and had been married for sixty years. Though they were far from rich, they managed to get by because they watched their pennies.

Though not young, they were both in very good health, largely due to the wife's insistence on healthy foods and exercis
e for the last decade.

One day, their good health didn't help when they went on a rare vacation and their plane crashed, sending them off to Heaven.


They reached the pearly gates, and St. Peter escorted them inside. He took them to a beautiful mansion, furnished in gold and fine silks, with a fully stocked kitchen and a waterfall in the master bath. A maid could be seen hanging their favorite clothes in the closet.

They gasped in astonishment when he said, 'Welcome to Heaven. This will be your home now.
'

The old man asked Peter how much all this was going to cost.
'Why, nothing,' Peter replied, 'remember, this is your reward in Heaven.' Jesus paid you price long ago.

The old man looked out the window and right there he saw a championship golf course, finer and more beautiful than any ever built on Earth.
'What are the greens fees?' grumbled the old man.

'This is heaven,' St. Peter replied. 'You can play for free, every day.'

Next they went to the clubhouse and saw the lavish buffet lunch, with every imaginable cuisine laid out before them, from seafood to steaks to exotic deserts, free flowing beverages.

'Don't even ask,' said St. Peter to the man, 'this is Heaven, it is all free for you to enjoy.'

The old man looked around and glanced nervously at his wife.

'Well, where are the
low fat and low cholesterol foods, and the decaffeinated tea?,' he asked.

'That's the best part,' St. Peter replied, 'you can eat and drink as much as you like of whatever you like, and you will never get fat or sick. This is Heaven!'

The old man pushed, 'No gym to work out at?'


'Not unless you want to,' was the answer.

'No testing my sugar or blood pressure or...'
'Never again. All you do here is enjoy yourself.'
The old man glared at his wife and said, 'You and your bran muffins. We could have been here ten years ago!'

Does anyone have a recipe for vanilla balls, they are kinda like the peanut butter balls that you dip in chocolate. I know they have butter,powered sugar, instant pudding ect,ect.

Share your favorite cookie recipe. Here's one I like to make this time of year. They are so good.
 
1 (17-ounce) package frozen puff pastry
Vegetable shortening
2 cups pastry cream (see recipe), whipped cream or other filling
Heat oven to 425 degrees. Partially thaw pastry and cut into strips about 6 inches long by 1/2 inch wide. Wrap each strip in a spiral around a well-greased, one-piece wooden clothespin, overlapping the edges by about 1/4 inch.
Place pins 1 1/2 inches apart on ungreased cookie sheets. Bake 5 minutes. Reduce heat to 375 degrees and bake about 10 more minutes more, until pastry is golden brown.
Slip spirals off clothespins and allow to cool completely. Fill, using a pastry bag.
 
 
PASTRY CREAM
1/3 cup sugar
2 tablespoons all-purpose flour
2 tablespoons cornstarch
4 egg yolks
1 cup milk
1 teaspoon vanilla
1/2 cup whipping cream or marshmallow cream
Beat the sugar, flour, cornstarch and egg yolks on high speed until thick and lemony, about 3 minutes. In a medium saucepan, bring the milk to a bare simmer.
Beating constantly, slowly add about a third of the hot milk to the egg mixture. Stir in the remaining milk.
Return mixture to pan and cook over medium heat, stirring constantly, until custard is thick, about 5 minutes. Remove from heat and stir in the vanilla. Allow to cool to room temperature. Beat the whipping cream until stiff, and fold into custard. Makes about 2 cups.
Refrigerate if not serving immediately. Makes about 3 dozen

Local News / New Signs

Has anyone seen the signs that have been put up at the Waynesville City limits. I noticed it on my way home from work but didn't get to read it  something about the home of the Tigers state football champ 07. I think it is great for the town and the team.
